Although I've struggled to avoid it, most tomato sauces have a small quantity of sugar in them because it changes the flavor of the tomato dramatically (sometimes too dramatically, we picked up a case of S&W Organic tomato sauce that I thought was just tomatoes cooked down, until I tasted it, and now it's reserved for sauces like this). I generally avoid it, but sometimes I'm going for that classic marinara flavor.

It's just a teaspoon of sugar. You can skip it.
The paste is used as a thickener. If you skip it, you either have watery marinara, or you have to simmer a lot, lot longer.
