NYTimes: Safety of Beef Processing Method is Questioned. Major food processor uses vacuum to suck remaining everything (including spinal cord bits, hello mad cow/CJD) off the carcass, processes with ammonia, mixes with ground "beef" to sell to fast food and school lunch programs.

Via MeFi, from which came this related article which points out that this crap (literally) shows up in products like "American Chef’s Selection Angus Beef Patties."

Buy your meat from a local farm. Work towards changing the laws letting the slaughter happen on that farm again, so that you can be aware of the process. Grind your own beef, or if you let someone else do it make sure that they're more than happy to let you watch (ie: your local butcher).

Local Chattanooga Region Fresh Meat from Sequatchie Cove Farms - Side note: they are fantastic people who helped me pull my water flooded cave exploring Bronco out of the cove behind their farm a few years ago.

Depending on the state, they can also get back halves or quarters from the slaughterhouse. That's how some butchers in the MSP metro gets their meat back.

But then I drive 222 miles north to buy my meat, which is slaughtered and butchered right there. Don't tell anyone, though. They'll probably make it illegal if they find out.

Eric, they're shipping their beef out to a local slaughterhouse, getting white paper packages back. Our local farm can do birds, so they slaughter their own turkeys and chickens, but the mammals get shipped and come back in packages.

I can buy from several small farms in my area - including a choice of beef, bison, elk and venison. There are also numerous CSA farms that sell shares of cows for milk or beef. Haven't heard of any of them being shut down by the Feds.

The Federales have been shutting down all the small slaughterhouses; it's nearly impossible to buy beef from a small farm any more.
